How to make Pumpkin Kootu
Pumpkin Kootu/Poosanikaai Kootu, Never i tasted these kind of delicious Kootu with pumpkin.. Last time when we visit our family friend in Coimbatore, i supposed to taste this curry..
This is kind of Spicy Dish with pumpkin, normally if pumpkin didn’t cook properly they will not taste great, This side dish is super duper combo with sambar, or any other kind of veg gravies.

Ingredients
Pumpkin | 1 cup chopped |
Oil | 2 tsp |
Mustard | 1/2 tsp |
Jeera | 1 tsp |
Onion | 1 medium |
Curry Leaves | 1 spring |
Green chilli | 3-4 nos |
Hing | 1/2 tsp |
Chillie Powder | 1 tsp |
Salt | to taste |
Coconut | 1/4 cup |
Method
Cut the pumpkin into pieces..
Slice them, Chop them into pieces..
Here is my Chopped pumpkin
Heat a pan with oil, temper with mustard and jeera..
Fry the chopped onion and garlic..
add int he curry Leaves
Add in the slitted green chillies.
Followed by chopped pumpkin
Sprinkle some salt, hing..
Some chilli Powder.. Mix them well and allow this cook for 2-3 mins..
Sprinkle some water.. Cover and cook the Pumpkin till they turn soft..
All done, here is the final step..
Add Some Grated coconut and switch off the flame..
Mix them well and serve with all kind of veg curry..
Notes

- Adjust chilli powder and green chilly to your taste bud, the amount i used in this recipe is enough hotness.
- Adding coconut is completely your choice.. coconut gives a good texture and crunchy taste..
- No need to peel the skin of pumpkin, pumpkin skin had lot of nutritious value, also they cook easily..
- Chop pumpkins to small as much small you can, to cook them fast..
