South Indian Sambar, staple recipe of all south Indian house, flavoured, textured, tasty sambar is really a challenging job. But this is not a rocket science secret to make a perfect tasty sambar.
Piping hot sambar are always the best idli or dosa. This is a basic recipe for beginners, There are so many methods to make sambar, this method never disappointed me. Sambar is a curry or gravy which accomplished with the main course meal.
A Sambar is a gravy prepared with cooked toor dhal and vegetables. Vegetables can be any of your choice, but recommended to use either a drumstick, brinjal, carrot.

Ingredients
Thoor Dhal | 1/2 cup |
Garlic | 4-5 pods |
Pearl onion | a handfull |
Tomato | 2 medium sized |
Drumstick | 1 nos |
Brinjal | 2 nos |
Potato | 1 medium |
Carrot | 1 nos |
Beans | 3-4 pcs |
Green chilli | 2 nos |
Salt | to taste |
Turmeric Powder | 1/4 tsp |
Sambar Powder | 1 tsp |
Hing | 1/2 tsp |
Tamarind Water | 1/4 cup |
Coriander Leaves | a handfull or 3-4 springs |
Ingredients to temper
Oil | 3-4 tsp |
Mustard | 1/4 tsp |
Methi seeds | 1/2 tsp |
Hing | 1/4 tsp |
Red chilli | 3-4 nos |
Curry Leaves | 2 spring |
Method
Wash and clean the vegetables, Chop the vegetable to even size
Add enough water till they immerse, add some slitted green chillies..
In the mean time pressure cook the thoor dhal with pearl onion, Garlic and Tomatoes.. release the pressure and mash everything..
Cook the Vegetable till they turn soft..
Once they done, add some tamarind water, Sambar powder, turmeric powder, Hing to the vegetables..
Allow this to cook for 5- 8 mins.. cook till the masala smell goes off, add in the cooked dhal..
Again bring this to boil for 10 mins in medium flame.
Heat a pan with oil, Temper with Mustard, Methi seeds, Curry leaves, Red chilli powder, hing..
Add the tempering to the sambar..
Followed by a handful of cleaned chopped coriander leaves.

- You can add vegetable any of your choice..
- i used homemade sambar powder, you use any of your choice, also you can adjust the spice level in sambar powder..
- Only then the vegetables get cooked well add in the Tamarind water.. once you add tamarind water, vegetable took more time to cook..
- Can add few crushed garlic in tempering part..
