Lemon Rice

Lemon Rice, tangy fully flavored South Indian Rice… The bright Color of turmeric is the best attraction towards the rice bowl..

Loads of health benefits behind Lemon… Mostly this severs in many occasions, this is one among the variety rice list… This is not our regular one in our home, this time i had few lemons in refrigerator, i reserved them for making juice.. and every one strucked with Cold from the last week, its a good source to reduce heat for this terrible climate… this tangy flavored rice goes well with Coconut chutney, Pickles and Potato fry… Here we go with the recipe and Do try and let me know how it turns for you..

Preparation time- 20 mins
Cooking Time- 5 mins
Serves- 2

Ingredients:
Rice- 1 cup
Lemon- 1
Gingely oil- 5 tsp

To temper:
Mustard- 1 tsp
Urad dhal- 1/2 tsp
Channa dhal- 1/2 tsp
Pea nuts/Ground nuts- 1 tsp
Curry leaves- 1 spring
Red chillie- 2 nos
Turmeric – 1/4 tsp
Salt

Method:

* Boil the rice with 2 cups of water, release the pressure and spread them over a plate with a tsp of oil to separate the rice grains.. make ready with the tempering ingredients.

* Squeeze out the lime juice stain it and keep aside..

* Heat the Kadai with Gingely oil, temper with mustard, urad dhal, channa dhal and ground nuts, let them fry for few mins(3-4) in medium flame, add in the Curry leaves and Red chillies.. switch off the flame now..

* Add some turmeric powder and Lemon juice in the hot oil,  mix them well..

* Add the Rice to the mixture and mix them well..
Note:
* Use good ripped lemon, squeeze gently, if press hard to squeeze out the juice bitter taste will b there
* Gingely oil enhance the flavor, and taste.
 All done, serve with Coconut chutney, pickles and potato fry..
