How to make Brinjal Puli kootu
Brinjal thokku, Again a easy peasy curry, recipe adapted form my friends mom. My Friend is from Sivakasi its south town in India, the recipe followed in that region will be very interesting and they will be in easy to follow instruction.
When ever Aunt comes to visit my friend I will visit her without fail, She always used share interesting easy recipes with me. Well, my most of the conversation will be around cooking related. This curry is such a delicious one to relish with hot steamed rice, i prefer for idli dosa too.

Ingredients
Brinjal | 4-5 nos |
Onion | 1 cup chopped |
Tomato | 3-4 nos |
Oil(gingely oil) | 2 spoon |
Mustard | 1/2 tsp |
Methi Seeds | 1 tsp |
Curry Leaves | 2 spring |
Garlic | 4-5 pods |
Chilly powder | 2 tsp |
Coriander Powder | 1.5 tsp |
Turmeric Powder | 1/4 tsp |
Salt | to taste |
Sambar Powder | 1 tsp |
Tamarind Water | 1 cup(pulp of a lemon sized tamarind) |
Method
Here i kept all the things ready.. crushed some garlic pods, Chopped onion and tomatoes, And cubed the brinjal and soaked them in water, Tamarind water..
Heat the Pressure pan with oil, Temper with Mustard and Methi seeds..
Followed by chopped onion, same this for few mins..
Add some crushed garlic and curry Leaves..
Fry the garlic for few mins and squeeze out the brinjal and add this to the Pressure pan..
Fry the bridal for 5-6 mins and add the chopped tomatoes to the pan..
Cook till the tomatoes get mushed and ooze out the oil..
Add in the chilly powder, coriander powder, turmeric powder and sambar powder, salt..
Mix this well..
Add in the tamarind water..
Bring this to boil.. Cover this with the lid.. and pressure cook for 2 whistles.
Release the pressure and open the pan.. check for salt and taste.. adjust and cook more if needed..
