How to make Baby Potato Jeera Roast

Baby Potato and I have a long travel, Six years back when i Saw these beauties in Bangalore Vegetable shops, that time i was carrying my first one, bought and tried spicy roast, but my pregnancy symptoms forced me to throw them out, that was tasty but till i have no clue why i did that, after six years i took a pack of baby potatoes without any thoughts. never know this potatoes will be this much tasty, these tender beauties are out of word to narrate the taste. have added a load of Jeera, hing and Lemon juice for digestion, and the freshly crushed ginger and garlic are the best part..

Ingredients
Baby Potato | 1/4 kg |
Oil | 4 tsp |
Jeera | 3 tsp |
Hing/Perungayam | 1/2 tsp |
Ginger | 1″ |
Garlic | 5-6 pods |
Coriander Leaves | a handful chopped |
Green Chillie | 2-3 nos |
Chillie Powder | 1 tsp |
Turmeric Powder | 1/4 tsp |
Garam Masala | 1/2 tsp |
Salt | to taste |
Lemon Juice | 2 tsp |
Method
Wash and clean the baby potatoes, pressure cook for 2 whistles with some salt, once the Pressure Released Put the Boiled potatoes in cold water and peel them.

Heat a kadai with oil, Temper with Jeera

Add in the hing and fry for a minute

Peel Ginger and garlic crush them roughly, add it to the tadka

Add in the Chopped Coriander Leaves

Followed by Green chilli, Once the raw smell goes off from the masala.

Add peeled potatoes to the kadai, roast this for 2 minutes in low medium flame.

Add chilli powder, Turmeric powder, garam masala, mix them well, allow this to cook for 2-3 minutes

Add required salt and 1/4 cup of water.. cover and cook for few mintes..

Switch off when the masala get cooked well with the Potatoes, garnish with Coriander leaves and chopped coriander leaves..

-
- Serve this Roast with Pulao, Fried Rice and Roti.
- Can ad some Jeera Powder too, for more flavour
- Lemon juice brings tickling taste, if you have chaat masala, can add a pinch too.
- Dont add Ginger garlic paste, add in freshly crushed ginger garlic that enhance a good flavour and taste.
