How to make Vegetable Soup
Vegetable Soup, Second soup arrays in the Soup series. This is a staple recipe of my MIL, she used to prepare in various method.. Mainly for my Diabetic FIL, she used to prepare this for his breakfast..
Once my FIL was in a North India Tour(Office Work), He tasted some soup related to this taste, after his return he explained the food and trip, At that time MIL catch this Vegetable soup and adopted a method to her wish, she recreate the recipe according to diabetic recipe, and here i should tell some words about my MIL, she is such an expert in culinary(South Indian Meals), And till date i never found a recipe book, pen, note around her in kitchen, she will watch and read recipes, and at the end everything by her own idea she will do, always i adore the skill she have.. and this recipe completely calls for her name.. Taste of the recipe is so creamy and rich with the goodness of Milk, Oats and Green moong Dhal..

Vegetable Soup

Ingredients
Grren Whole moong Dhal | 3 tsp |
Ladies finger | 4 nos |
French Beans | 4-5 nos |
Cluster Beans | 4-5 nos |
Board Beans | 4-5 nos |
Pearl Onion | 4-5 nos |
Garlic | 6 pods |
Bottle Gourd | 1 small piece |
Radish | 1 small piece |
Milk | 1/4 cup |
Oats | 2 tsp |
Pepper Powder | 1 tsp |
Jeera | 3/4 tsp |
Salt | to taste |
Method
Wash and Clean your vegetables, here i used Ladies finger, French beans, Board Beans, Cluster beans, Bottle Gourd, Radish
Take the moon dhal, wash and soak it for 30 mins
Finely chop the vegetables, include pearl onion and garlic too..
Take Everything to the pressure cooker along with the soaked moon dhal, Add Jeera Pepper and salt..
Pressure cook this for 2 whistles, Release the Pressure and keep aside
Take the oats in pan, add 1/4 cup of water, bring this to boil in medium flame..
Once the oats get cooked, add the cooked vegetables..
Cook this for few mins
Add more pepper powder and salt if need
Before serving Add few teaspoons of milk to the soup..

- Add milk before you serve, Milk is an optional ingredient, gives you a creamy texture to the soup.
- Adding Jeera and Pepper enhance the Flavour
- Can add vegetables of your choice
